New Potatoes with Garlic and Herbs (pommes
de terre estivales) Recipes
2lb small new potatoes
1.5 oz butter
1 tbsp oil
1 tbsp finely chopped shallots or onion
3 leaves mint, finely chopped
1 tbsp parsley, chopped
2 cloves garlic, crushed
potatoes and bring them to the boil in a pan of cold, salted water, then
drain at once. Melt the butter and oil in a frying-pan and fry the
potatoes, with the pan covered, over a low heat for 20 minutes.
Shake the pan from time to time. Add the shallots or onion, herbs and
garlic, season with salt and pepper, cover and cook for another 15
minutes. Serve very hot.
