French Style Peas with Lettuce (Petits Pois A La Francaise) Recipes
Ingredients :
675g (1.5 lb) shelled peas
salt and freshly milled black pepper
25g (1 oz) butter
1 bunch spring onions, trimmed and chopped
1 lettuce heart, finely shredded
150ml (1/4 pint) creme fraiche or soured
cream
Method :
If using
fresh peas, blanch them first in a medium saucepan of boiling salted
water for 5 minutes, then drain. Melt the butter in the saucepan. Add
the onions and cook for 2-3 minutes, then stir in the peas and cover the
saucepan.
Cook for 5
minutes, shaking the pan frequently. Add the lettuce and seasoning and
cook gently for a further 5 minutes. Stir in the strain, taste and
adjust the seasoning, then serve at once.
Serves 6
This is a classic method of cooking young
fresh peas; however it also transforms frozen peas. For slightly older
fresh peas, allow another 5-10 minutes cooking tie when blanching the
vegetables.
