Brittany Style Haricot Beans (Haricots Aux Tomates) Recipes

Ingredients :

225g (8 oz) dried haricot beans

2 cloves

2 onions, skinned

1 bouquet garni

1 garlic clove, crushed

1 rasher streaky bacon, rinded and chopped

salt and freshly milled black pepper

25g (1 oz) butter

15ml (1 tbsp) tomato puree

15ml (1 tbsp) chopped fresh parsley

Method :

Put the beans in a large saucepan. Cover the beans with plenty of cold water and leave them to soak overnight. Drain the beans and cover with fresh cold water. Stick the cloves in one of the onions, then add it to the pan with the bouquet garni, garlic, bacon and seasoning.

Bring to the boil, cover and simmer gently for 75-90 minutes or until the beans are tender. Drain, reserving 300ml (1/2 pint) of the cooking liquid. Discard the onion and bouquet garni. Rinse out the saucepan.

Finely chop the remaining onion. Melt the butter in the pan. Add the chopped onion and cook it gently for aobut 5 minutes, then stir in the tomato puree and reserved cooking liquid.

Bring to the boil, cover and simmer gently for 10 minutes. Add the drained baeans and simmer for a further 10 minutes. Taste and adjust the seasoning, then sprinkle the parsley over the beans and serve.
