Rice Pilaf Cooking Recipes

Ingredients :

3 tbsp

1 cup

1/3 cup

2 cup

1/2 tsp

1 cup

1 cup

butter

long grain rice

sliced almonds

beef broth, boiling hot

salt (optional)

frozen peas

grated carrots

Method :
  1. Put the butter in a 21/2-quart microwavable casserole and microwave on high 100% for 30 seconds.
  2. Add the rice and the almonds and stir to coat with the butter.
  3. Microwave on high 100% for 4 minutes, stirring twice.
  4. The rice will be golden brown.
  5. Add the boiling broth and salt (if needed) and stir.
  6. Microwave, covered on high 100% for 2 minutes.
  7. Microwave, still covered on medium 50% for 15-18 minutes, until the rice is cooked.
  8. Put the peas in a 2 cup glass measure.
  9. Microwave, covered on high 100% for 3 minutes.
  10. Add the peas and carrots to the rice.
  11. Stir to combine and serve immediately.

Serves 6-8

Crunchy sliced almonds turn this colorful rice pilaf into something quite special.
