Grilled Asparagus with Walnut Sauce Recipes

Ingredients :

2lb asparagus

Walnut sauce:

2 oz walnuts

2 large spring onions, very finely chopped

1 garlic clove, crushed

1 tsp grated lemon rind

1 tbsp chopped basil

1 tbsp chopped parsley

4 tbsp walnut oil

2 fl oz milk

1 oz vegetarian Parmesan cheese, grated

Method :
  1. First make the sauce.
  2. Fry the walnuts in a dry frying pan over moderate heat, stir, until toasted.
  3. Grind them with the spring onions, garlic, lemon rind and herbs.
  4. Whisk in the oil and then the milk to form a smooth sauce of a fairly thick pouring consistency.
  5. Brush the asparagus with oil and place under a preheated hot grill for 5-6 minutes, turning frequently until golden and tender.
  6. Transfer the asparagus to a warmed gratin dish, pour over the sauce and then sprinkle over the cheese, if using.
  7. Return to the grill for 1-2 minutes until bubbling.
  8. Ready to serve.
