Grilled Asparagus with Lemon, Red Peppers, and Caper Vinaigrette Recipes
Ingredients :
1 pound asparagus, cut into 5-inch pieces
Kosher salt
freshly ground black pepper
1/4 cup chopped red onion
1/2 cup diced roasted red bell pepper
1 tbsp capers, rinsed in cold water and
drained
1 tbsp champagne
3 tbsp lemon juice
Method :
Prepare a charcoal grill. Bring a large
pot of salted water to a boil. Drop in the asparagus and cook for 60
seconds, or until barely tender. Remove and place immediately into ice
water. When cool, drain well. Season the asparagus lightly with salt and
pepper and set aside. In a large bowl, mix together the rest of the
ingredients to make a vinaigrette. Place the asparagus on the hot grill. Turn
the spears once so they are warmed through. Remove the asparagus and
pace in a large bowl with the vinaigrette and toss lightly. Divide the
asparagus among 4 plates. Serve immediately.
