Celery Cream Soup Recipes

Ingredients :

60g

1 bunch

6 cups

300ml

butter or margarine

onions, peeled and chopped

celery, chopped

beef stock

thickened cream

freshly ground black pepper

celery seeds, for garnish

Method :
  1. Melt butter in a large saucepan.
  2. Sauté onions and celery until onions are transparent.
  3. Stir in beef stock.
  4. Simmer 45 minutes.
  5. Blend until smooth in food processor.
  6. This may be done in several batches.
  7. Add cream and seasoning.
  8. Reheat (without boiling).
  9. Sprinkle lightly with celery seeds to serve.
