Cauliflower Soufflé Recipes

Ingredients :

1 medium cauliflower

1 cup milk

30g butter

60g cheese

1 cup wheat meal breadcrumbs

2 eggs

salt, pepper


Method :
  1. Parboil the cauliflower gently and remove while still undercooked.
  2. Place to one side while the milk is warmed.
  3. Melt the butter in the milk, add the cheese, grated, and the breadcrumbs.
  4. Stir thoroughly and add the lightly beaten egg yolks and season.
  5. Detach the cauliflower florets and mix into the breadcrumb mixture.
  6. Whip the egg whites until stiff and fold into the mixture gently.
  7. Sprinkle a few crumbs on top and bake for 30 minutes in a oven.
  8. Serve immediately with a sprinkling of parsley.
  9. A lovely dish which would do justice to a special dinner.

Serves 4 - 6
