Cauliflower with Breadcrumbs and Hazelnuts Recipes
Ingredients :
25g butter
50g fresh white breadcrumbs
25g hazelnuts, finely chopped
375g dried fusilli
8 tbsp hazelnut oil
1 cauliflower, divided into tiny florets
2 garlic cloves, sliced
1 dried red chili, deseeded and chopped
2 tbsp chopped parsley
salt and pepper
Method :
Melt the butter in a frying pan,
add breadcrumbs and hazelnuts and stir-fry over a medium heat for 3
minutes, until crisp and golden, drain, set aside.
Cook the pasta until al dente
Heat half the oil, add
cauliflower, garlic and chili, fry 8-10 minutes until cauliflower is
golden and tender, add parsley.
Drain pasta, toss with the
remaining oil and pepper and stir into the cauliflower mixture.
Ready to serve, topped with crispy
breadcrumb mixture.
