Cauliflower and Macaroni Souffle Recipes

Ingredients :



2 tsp


1 cup


medium cauliflower, cut into florets

eggs, separated

prepared mustard

grated tasty cheese

white sauce

elbow macaroni, cooked

freshly ground black pepper, to taste

Method :
  1. Cook cauliflower in water until tender.
  2. Drain well.
  3. Process in a food processor or blender until smooth with egg yolks, mustard and seasonings.
  4. Add cheese to white sauce.
  5. Cool and add sauce to puree.
  6. Blend in cooked macaroni.
  7. Beat egg whites until stiff peaks form.
  8. Fold gently into cauliflower mixture.
  9. Spoon into large greased soufflé dish.
  10. Bake in a moderately hot oven 190C (375F) for 35 minutes or until set.
  11. Serve immediately with salad and crusty bread.

To Prepare White Sauce:

  1. Melt 50g butter or margarine in a small saucepan.
  2. Blend in 2 tbsp plain flour.
  3. Cook 1 minute.
  4. Remove from heat.
  5. Blend in 1 cup milk.
  6. Return to heat.
  7. Cook, stirring constantly, until sauce boils and thickness.
  8. Simmer for 3 minutes.
  9. Season to taste.

Serves 4-6
