Put the oil and garlic in a glass
measure. Microwave on high 100% for 1
minute, until the garlic softens and the oil is hot. If you are using frozen broccoli
florets, puncture the package and microware on high 100% for 2-3
minutes.
Separate the florets and put them
in an 8 or 10" microwave browning skillet. Add the peppers and mushrooms and
stir to mix. Pour the oil and garlic over the
vegetables. Sprinkle with the soy sauce.
Cover and microwave on high 100%
for 4-7 minutes, until the broccoli and peppers are crisp tender. Stir after 3 minutes and test to
adjust the cooking time.
Serves 4
Using a browning skillet gives this
vegetable mixture the flavor and texture of a stir fry, but if you have
no browning skillet, the dish will taste good. Be sure to test the
vegetables partway through cooking to judge the correct total cooking
time.
