Heat oil in a
medium skillet. Saute onion, garlic, broccoli, carrots, red pepper, salt
and black pepper until broccoli is tender. Stir in tofu and chicory, and
cook just until chicory begins to wilt. In a small bowl, combine water,
arrowroot, honey and vinegar. Stir into vegetable and tofu mixture, and
heat through until thick and bubbly.
Serves 6
This dish
uses broccoli rabe and chicory for an intriguing, slightly bitter
variation on the traditional stir-fry. Serve over brown rice for a fast
family meal.
