Broccoli and Pine Nut Casserole Recipes

Ingredients :

1/4 cup pine nuts

2 pounds broccoli tops, cut into florets

18-ounce package silken tofu

1 tsp sea salt

1/4 tsp white pepper

1 cup grated soy cheese

1 tbsp whole-wheat flour

1/4 cup finely chopped fresh sage

1/4 cup whole-wheat bread crumbs

Method :

Preheat oven to 375F. Toast pine nuts at 375F for 5 minutes. While nuts are toasting, steam broccoli just until bright green but still crunchy. Combine tofu, salt and pepper and mix until creamy. Add soy cheese, flour, sage, bread crumbs, and half of the pine nuts. Add broccoli to tofu mixture and mix well. Turn into lightly oiled casserole and sprinkle with remaining pine nuts. Bake at 375F about 15 minutes.

Serves 4-6

This creamy, dairy-free delight combines broccoli with the delicate taste of pine nuts and fresh sage for a quick and easy side dish.
