Broccoli and Macaroni Casserole Recipes

Ingredients :

whole meal macaroni


canned tomatoes

large onion, chopped

clove garlic, crushed

dried oregano

low fat plain yoghurt

low fat soft cheese

Bran Flakes


ground black pepper

a sprig of parsley (garnish)

Method :
  1. Cook the macaroni in plenty of boiling, salted water for 12-13 minutes, or according to the directions on the packet, until just tender.

  2. Drain and keep warm.

  3. Trim the broccoli and steam or cook in boiling, salted water, until just tender.

  4. Drain.

  5. Simmer the tomatoes, onion, garlic and oregano, seasoned with salt and pepper, for 20 minutes, or until the onion is tender.

  6. Heat the oven to 200oC (400oF), Gas 6.

  7. Put a layer of the tomato sauce into an ovenproof dish, cover with a layer of cooked macaroni then a layer of broccoli.

  8. Repeat the layers.

  9. Beat together the yoghurt and cheese, and season with salt and pepper.

  10. Spread over the casserole and bake for about 30 minutes, until the topping is bubbling and golden brown.

  11. Sprinkle with Bran Flakes, garnish with the parsley and serve very hot.

Serves 4

Per Serving : 3 g fat, 10 g fiber.
