Broccoli Cheese Casserole Recipes

large bunches broccoli, with thickest parts of stems removed

chopped onion

large eggs

small curd cottage cheese

grated Monterey jack cheese

grated cheddar cheese

half and half

finely chopped parsley

Method :

Wash the broccoli, cut it into bite sized pieces and put it in a 2-quart microwavable casserole. Cover and microwave on high 100% for around 3 minutes, stirring after 2 minutes. Remove from the microwave.

Put the onion in a 1 cup glass measure. Microwave on high 100% for 1 minute until softened. Beat the eggs in a large bowl. Stir in the cottage, jack and cheddar cheeses, half and half, softened onion and parsley.

Add the broccoli and stir to combine. Pour into a 2.5 quart round microwavable casserole. Microwave on medium 50% for 15-18 minutes, stirring once, until the broccoli is tender and the cheeses are melted.

Serves 6-8
