cottage cheese

Monterey jack cheese

Method :
- Wash the broccoli, cut it into bite sized pieces
and put it in a 2-quart microwavable casserole.
- Cover and microwave on high 100% for 3-31/2
minutes, stirring after 2 minutes.
- Remove from the microwave.
- Put the onion in a 1 cup glass measure.
- Microwave on high 100% for 1 minute until
softened.
- Beat the eggs in a large bowl.
- Stir in the cottage, jack and cheddar cheeses,
half and half, softened onion and parsley.
- Add the broccoli and stir to combine.
- Pour into a 21/2 quart round
microwavable casserole.
- Microwave on medium 50% for 15-18 minutes,
stirring once, until the broccoli is tender and the cheeses are
melted.
Serves 6-8

Broccoli casserole with a smooth cheese
