Asparagus with Herbs and Parmesan Recipes

Ingredients :

thick asparagus spears

butter or margarine

clove garlic, finely chopped

finely chopped fresh parsley

finely chopped chives

lemon juice

grated Parmesan cheese

Method :
  1. Using a vegetable peeler, peel the lower part of the stalks and cut off the ends of the asparagus.
  2. Wash the asparagus well in cold running water.
  3. Tie them into 2 bundles with string.
  4. Place them in an asparagus steamer or a large pan of boiling water.
  5. The stalks only should be in the water so that the tips steam.
  6. Cover the pan with foil or an upturned saucepan of the same diameter.
  7. Cook for 10-15 minutes, depending on the thickness of the asparagus.
  8. Test after 10 minutes (the thickest part of the stalk should be just tender).
  9. Overcooking ruins asparagus.
  10. Drain well, keep warm.
  11. Melt the butter in a small frying pan over medium heat.
  12. Add the garlic and cook gently for 1 minute.
  13. Stir in the herbs and lemon juice.
  14. Place asparagus on warmed plates.
  15. Pour over the sauce.
  16. Serve Parmesan separately.
