Asparagus Hollandaise Recipes

Ingredients :


185 g

2 tbsp

1/2 tsp

310 g

egg yolks

butter, melted

lemon juice

freshly cracked black pepper

fresh asparagus

Method :
  1. Place the egg yolks in a food processor and process for 20 seconds.

  2. With the motor running, add the melted butter in a thin steady stream and process until thick and creamy.

  3. Add the lemon juice and pepper, and season with salt.

  4. Cut any thick woody ends from the asparagus and discard.

  5. Add the asparagus to a pan of boiling water.

  6. Cook for 2-3 minutes, or until the asparagus is bright green and tender.

  7. Drain quickly and place on serving plates.

  8. Spoon the Hollandaise Sauce over the top.

Serves 4 - 6 Preparation : 10 minutes Cooking : 10 minutes

The Hollandaise may be kept warm in a bowl over a pan of simmering water while the asparagus cooks. Do not overheat it, however, or the sauce will split.
