Artichoke and Sausage Fettuccine Recipes

Ingredients :

Danish salami, chopped

onion, peeled and chopped

cloves garlic, crushed

chicken stock

dry white wine

canned artichoke hearts, drained and quartered

fettuccine

butter or margarine

Parmesan cheese

finely chopped parsley

red capsicum (pepper), cut into strips

freshly ground black pepper to taste

Method :
  1. Combine salami, onion and garlic in a frying pan.
  2. Cook gently until the onion is golden.
  3. Pour in stock and wine.
  4. Bring to the boil then simmer, covered, for 15 minutes.
  5. Add the artichokes hearts.
  6. Cook for a further 5 minutes.
  7. Set aside the covered pan.
  8. Cook fettuccine in plenty of boiling water for 8 minutes or until tender.
  9. Drain and toss with butter and seasoning.
  10. Combine fettuccine with the artichoke mixture.
  11. Serve in individual portions sprinkled with Parmesan cheese and parsley.
  12. Garnish with capsicum strips.
