Vegetable Medley Pasta Cooking Recipes

Ingredients :

broccoli florets

green pepper strips, each 1/4 by 2"

pepper strips, each 1/4 by 2"

vegetable oil

red wine vinegar



dried oregano

dried basil

dry mustard

cayenne pepper

clove garlic, finely chopped

hot egg, spinach and carrot or tomato pasta, cooked and drained

pitted black olives

Method :
  1. Put the broccoli and the green and red pepper strips in a 21/2 quart microwavable casserole.
  2. Microwave on high 100% for 11/2 -2 minutes, stirring after 1 minute.
  3. Combine the oil, vinegar, sugar, salt, oregano, basil, mustard, cayenne pepper and garlic in a 1 cup glass measure.
  4. Microwave on high 100% for 11/2 minutes, stirring after 1 minute.
  5. Toss the hot pasta with the vegetables and the olives.
  6. Pour the hot dressing over the paste mixture and toss to coat.
  7. Serve immediately.

Serves 4

Note :

Offer this colorful pasta either as a main course or a side dish. Green pasta is egg pasta with spinach worked into the dough; adding carrot or tomato makes pasta red. If you cannot fins colored pastas, make it with plain egg pasta - it will be just as tasty.
