Ingredients :
1 cup tomatoes, peeled, seeded and diced
1/4 cup chopped red onion
2 tbsp minced jalapeno pepper
1 tbsp chopped fresh cilantro
1 tbsp fresh lime juice
salt
In a medium bowl, combine all ingredients. Mix thoroughly. Season to taste with salt
Makes 1.25 cups
This can be prepared up to 3 days ahead of time, though the tomatoes will release some of their juices.
