Combine the vegetable oil, sesame
oil and red pepper in a microwavable casserole.
Microwave on high 100% for 1 to 2
minutes, until hot.
Add the snow peas pods and bok
choy and toss to combine.
Lay 2 connected paper towels on
the counter and put half the vegetables on top, over the
perforations.
Fold the towels to enclose the
vegetables.
Repeat with the remaining
vegetables and set both packets on a large microwavable plate.
Pour half the chicken broth over
each packet and microwave on high 100% for 7 t0 10 minutes, until
the vegetables are crisp tender.
Rotate the plate once during the
cooking time.
Remove the vegetables from the
oven and let stand for 2 minutes.
Open the packet along the
perforations.
Stir in the mushrooms, if you are
using them, sprinkle with soy sauce and serve.

Note :
Steamed vegetables retain their color,
texture and flavor. In this recipe, crisp pea pods and bok choy are
enclosed in a paper towel packet which is moistened with broth or water.
To make the packet, first fold the long sides of the paper towels toward
the center and then bring up the shorter ends so that the food is
completely enclosed. Bok choy is sometimes called Chinese cabbage. Enoki
mushrooms, boxed in plastic, can be found in many supermarket and Asian
groceries.
Cooking Tip:
Use only unprinted white paper towels in
the microwave - preferably those specifically designed and labeled for
microwave use.
