Balti Courgettes Recipes

Ingredients :

1 oz ghee

1 small onion, chopped

pinch of asafoetida (optional)

2 small potatoes, quartered

12 oz courgettes, sliced

1/2 tsp chili powder

1/2 tsp turmeric

1 tsp ground coriander

1/2 tsp salt

150ml water

1/2 tsp garam masala

chopped coriander leaves, to garnish

Method :
  1. Heat the ghee in a frying pan, add onion, fry 5 minutes, stir, until softened.
  2. Add asafoetida (if using), add potatoes, fry 2-3 minutes.
  3. Stir in the courgettes, chili powder, turmeric, coriander and salt.
  4. Add water, cover, cook gently 8-10 minutes, until potatoes are tender.
  5. Sprinkle with garam masala, garnish with chopped coriander.
  6. Ready to serve.
