Orange Apricot Oatmeal Recipes

Ingredients :

1 cup old fashioned rolled oats

1 1/4 cups cold water

1/2 cup orange juice (or 2 tbsp frozen orange juice concentrate plus 6 tbsp water)

2 tbsp finely chopped dried apricots

1/4 tsp ground nutmeg

tiny pinch of salt

2 tbsp pure maple syrup, optional

2 tsp organic flaxseed oil, optional

2 tbsp chopped walnuts, pecans, or almonds, lightly pan-toasted if desired, optional

Method :

  1. Place all the ingredients except the maple syrup, flaxseed oil, and nuts in a medium saucepan and stir to combine.

  2. Bring to a boil.

  3. Cover and reduce heat to low.

  4. Simmer for 5 minutes, stirring once or twice.

  5. Remove from heat and let sit, covered, for 2 to 5 minutes.

  6. Stir in maple syrup and flaxseed oil, for using.

  7. Sprinkle one tbsp nuts over each serving, if desired.

To pan-toast the nuts, lightly dry-roast them in a skillet over medium heat, stirring often, until fragrant and golden brown. A chewy and satisfying hot cereal with just a hint of sweetness. Dried apricots are an excellent source of vitamin A, iron and potassium. Seek out only organic dried apricots. They will be a deep orange brown color. Avoid ones that are bright orange, as they will have been treated with sulfur dioxide.
