Egg and Asparagus Mornay Recipes

Ingredients :

250g cooked macaroni

4 hard boiled eggs, sliced

315g canned asparagus, drained and cut into 2.5cm, 1" pieces

1/2 tsp prepared English mustard

1/2 recipe low fat cheese sauce

4 tbsp breadcrumbs

Method :
  1. Spray a casserole dish with non stock cooking spray.
  2. Spoon in the macaroni and spread out evenly.
  3. Top the macaroni with the sliced hard boiled eggs.
  4. Sprinkle the asparagus pieces over.
  5. Mix the mustard with the Cheese Sauce.
  6. Pour over the egg and asparagus.
  7. Sprinkle with the breadcrumbs.
  8. Bake in a pre-heated oven for 20-30 minutes, or until well browned on top.
  9. Serve hot, accompanied by a fresh, green salad.

An ideal light meal, this dish is special enough to serve to guests for a brunch.
