Breakfast Fruit Compote Recipes

Ingredients :

75g / 3 oz (1/2 cup) dried prunes

75g / 3 oz (1/2 cup) dried apricots

50g / 2 oz (1/3 cup) raisins

3 bananas, peeled and thickly sliced

25g / 1 oz (1.5 cup) clear honey grated rind of 1/2 lemon

25g / 1 oz (2 tbsp) butter or margarine

200ml / 7 fl oz (1 cup) unsweetened orange juice

Method :

Soak the prunes and apricots overnight in cold water. Drain and place in an ovenproof dish with the raisins and bananas.

Dissolve the honey in a little warm water and pour over the dried fruit and banana mixture. Sprinkle with the lemon rind and dot with the butter.

Cover and bake in a preheated moderate oven (180C, 350F, gas mark 4) for 35 minutes.

Add the orange juice and return to the oven for a further 5 minutes. Serve warm with a little natural yogurt if liked.
